
BURLINGTON, Vt. (WCAX) – The University of Vermont is working to up its dining game. The school is hosting the Catamount Culinary Showcase on Wednesday.
The showcase pairs students with campus chefs to create dishes that celebrate cultures and foods from around the world.
There are no mystery meats, tater tots or square-cut pizza slices involved. The fare includes things like chicken street tacos with mango and avocado, lamb and beef lahmacun and pork tonkatsu. The 400 or so people expected Wednesday night will pick a fan favorite.
“So they submitted a recipe which was truly a family recipe, and our chefs helped scale that up to bring it to 500 portions, which many of these recipes are not intended to be, so they had to modify the recipes a little bit and some of the preparation techniques, but yes, it’s exciting to see this come to life,” said Nicole Reilly of UVM Dining.
The winning team gets bragging rights, and the top recipes will be used in dining facilities across the UVM campus.
While these meals might cost you $20-$30 in a restaurant, it’s free Wednesday night for students, staff and faculty to get in and chow down.
